Ginger Beet & Carrot Delight

Ingredients

  • 1 large beet
  • 3 medium carrots
  • 2 tbsp fresh ginger
  • 1 orange
  • 1 1/2 tbsp white vinegar
  • 1 can of corn
  • 1 can of garbanzo beans

Instructions

  • Peal beet and carrots and then shred through a food processor or grater (use the largest setting possible for either)
  • In a blender, blend the orange (peeled), ginger, and vinegar until smooth (no chunks)
  • Combine with beets and carrots and cook on stove top till soft.
  • Mix in corn and garbanzo beans (both drained) and remove from heat.
  • Serve on top of mixed greens, flat bread, or as is.
  • Top with avocado and dried onion flakes from some crunch
  • Enjoy

Notes

Shredded zucchini also goes very well with this dish, but cooks far faster than the root vegetables. If using, combine it with the beets and carrots just a few minutes before they’re done. (Or don’t cook it at all! Raw zucchini is great)
